Ingredients

  1. 3 ½ cups cream base
  2. 1 Tbsp Cocoa Powder 
  3. 2 Tbsp water
  4. 2 oz Baker's semi-sweet chocolate
  5. ¼ cup Barley malt syrup
  6. 1 cup whoppers

Instructions

Chocolate Mix

  1. Chop 2 oz of Baker’s semi-sweet chocolate in the chunks and place in a saucepan and set aside with 1 Tbsp cocoa powder and 2 Tbsp water.
  2. Stir the mixture until it is all combined and smooth. Be careful not to burn the chocolate. 
  3. As soon as it is smooth, take it off the heat and pour into a medium sized bowl.

Ice Cream

  1. In the medium bowl with chocolate in it add ¼ cup barley malt syrup and the cream base, whisk to fully combine.
  2. Pour into the ice cream maker and churn. Churn until the mix starts to look solid and firm. It’s ready when a spoon is pressed across the top and it should leave an impression without collapsing for just a second.
  3. While the ice cream is churning, put 1 cup of whoppers in a ziplock bag and with a rolling pin smash them until there is a nice variety of sizes.
  4. During the last minute of churning add most of the whoppers.
  5. Turn off the machine and remove the dasher. 
  6. Fill the container and sprinkle on a few whopper pieces. Cover and freeze for 8 hours or overnight.
