Ingredients

  1. 3 ½ cups brown sugar  base
  2. 4 cups fresh pineapple or 1 whole pineapple
  3. ¼ cup brown sugar
  4. ⅛ tsp salt

Instructions

Roasted Pineapple Puree (makes 1 cup):

  1. Preheat the oven to 350°F and prepare the baking sheet with parchment paper.
  2. Cut 1 pineapple into chunks and coat with brown sugar and salt.
  3. Lay out the pineapple in a single layer and put it into the oven for 15 minutes.
  4. Stir the pineapple and continue to bake until it starts to caramelize. About 20 more minutes.
  5. Remove from the oven and blend in a blender or use an immersion blender. 
  6. Strain the puree through a fine mesh sieve.

Ice Cream:

  1. In the bowl mix the cream base and 1 cup of pineapple puree.
  2. Pour into the ice cream maker and churn. Churn until the mix starts to look solid and firm. It’s ready when a spoon is pressed across the top and it should leave an impression without collapsing for just a second. 
  3. Turn off the machine and remove the dasher and fill the container.
  4. Cover and freeze for 8 hours or overnight.
